When I started my catering company Hedgehog Pie in 1995 in London, little did I know that I would become so obsessed with perfecting my signature hand-made chocolate cup pudding that it would lead to me launching a chocolate cookery school? A date to cook dinner for the Queen with chocolate cups on the menu was how it all started and I’ll tell you the story myself if you ask me!
After 20 years in the event catering world looking after clients in The House of Lords I have retired and now concentrate only on running my chocolate school.
The Chocolate Tart cookery school started in May 2007. Situated in a picturesque courtyard setting tucked away in Congresbury. Step into chocolate heaven! The aroma of cocoa wafts out to greet you as you enter into a beautiful working kitchen full of chocolate making equipment, ready for each student to master skills that will stay with them forever.

Since Covid destroyed the livelihood of my wonderful chocolate school and Airbnb 2020 was unbelievably tough. Pretty early on I started to pivot my business realising that if I couldn't teach you how to make chocolates, I could make them for you to buy from my online shop! New moulds, packaging, web content, and a lot of trials and errors later I have a handmade chocolate business that I am so proud of. Towards the end of 2020 I added Tutored Chocolate Tasting kits and Hands on Truffle Making kits to my repertoire. The journey of my business is 2020 has been one of the toughest of my life. To change direction without time to ponder and reflect whilst feeling like a rabbit in the headlights has been an interesting one! Sadly, as our family is 100% reliant on the leisure and hospitality industry we made the extremely tough decision to sell up to save our businesses. Our new family home will be by the sea in Clevedon. I will continue to make chocolates for the online shop based in a second dedicated kitchen within our new family home. as soon as it is safe to do so again, I will offer pop up workshops in the Bristol area in a number of exciting venues. When I feel brave and most important, it is safe again I will begin searching for a new and permanent home for my wonderful Chocolate School - so watch this space. Exciting times ahead!!
